Allergens in Worcestershire sauce

Worcestershire sauce usually contains fish, from anchovies, and barley malt vinegar, which is a cereal containing gluten. A vegan Worcestershire-style sauce is a different product and may drop the fish while keeping barley, or the reverse.

The usual pattern

The traditional sauce is vinegar, molasses, anchovies, tamarind, onion, garlic and spices, with malt vinegar supplying barley. The anchovy is why a beef dish can be a fish dish.

How to write it on the label

PPDS food needs the name of the food and a full ingredients list, with the 14 allergens emphasised every time they appear. The Food Standards Agency’s PPDS guidance is the practical reference. A typical ingredients fragment looks like this — yours must follow the specification of the product you actually use.

Malt vinegar (barley), spirit vinegar, molasses, sugar, salt, anchovies (fish), tamarind extract, onion, garlic.

Where it shows up

Bloody Mary mix, cheese scones, Welsh rarebit, marinades and some burger sauces.

A splash in the gravy

Staff treat Worcestershire as a seasoning, not an ingredient. On a PPDS pack it is both fish and, usually, barley.

If you leave it out of a batch, reprint. Do not sell yesterday’s label on today’s fish-free gravy.

Is Worcestershire sauce always fish?
Traditional sauces contain anchovies. Some vegan sauces do not. The label must follow the bottle in your kitchen, not the traditional recipe.
Why does a meat pie suddenly contain fish?
Because the sauce, glaze or gravy includes anchovy. Emphasise fish in the ingredients list.
