Allergens in oyster sauce
Oyster sauce contains molluscs. Most brands also contain soya, and many contain wheat. A vegetarian oyster sauce is a different product, usually mushroom-based, and is not mollusc-free by hope — check that it truly has no oyster extract.

The usual pattern
The sauce is oyster extract, sugar, salt, starch and often soy sauce. The starch may be wheat. The soy sauce brings soya and wheat again.

How to write it on the label
PPDS food needs the name of the food and a full ingredients list, with the 14 allergens emphasised every time they appear. The Food Standards Agency’s PPDS guidance is the practical reference. A typical ingredients fragment looks like this — yours must follow the specification of the product you actually use.

Where it shows up
Stir-fries, noodle boxes, marinades and some bao fillings.
Using it in a chicken dish
The menu name is chicken. The allergens include molluscs. The ingredients list has to say so.
Fish sauce does not replace oyster sauce on a label. One is fish, the other is molluscs.
