Allergens in couscous

Couscous is wheat. It is a cereal containing gluten. A packed couscous salad must emphasise wheat. People often treat it like rice. It is not rice.

The usual pattern

Ordinary couscous is durum wheat semolina, moistened and rolled. Giant couscous and pearl couscous are the same allergen. A maize or rice couscous exists only as a specifically different product.

How to write it on the label

PPDS food needs the name of the food and a full ingredients list, with the 14 allergens emphasised every time they appear. The Food Standards Agency’s PPDS guidance is the practical reference. A typical ingredients fragment looks like this — yours must follow the specification of the product you actually use.

A gluten-free salad with couscous

Roasted vegetables are not the allergen. The couscous is. Swap to rice or quinoa only if that is what you packed, and change the label.

Quinoa and buckwheat are not couscous and are not gluten cereals. Do not emphasise wheat for them.
