Sushi box PPDS label example

A sushi box packed in your kitchen before the customer chooses it is PPDS. Rice and nori are not the 14 allergens. Fish, sesame, soy sauce (soya and usually wheat) and prawn or crab are.

Sushi rice, nori, salmon (fish), sesame seeds, soy sauce (soya, wheat), prawn (crustaceans).

Fish — salmon
Sesame
Soya and wheat — soy sauce
Crustaceans — prawn, if used

What this teaches

Wasabi from a tube is often horseradish, not an Annex II allergen, but some pastes contain mustard or soya. Check the tube.

Is this PPDS?

Boxes assembled and lidded before display are PPDS. A piece made to order at a counter is not.

Questions

Is nori fish?

No. Nori is seaweed. It is not one of the 14 allergens.

Does sushi rice contain gluten?

Rice does not. Seasoning with ordinary soy sauce adds wheat and soya.
