Scotch egg PPDS label example

A scotch egg packed before sale needs a full ingredients list. The egg is obvious. The wheat in the rusk and the crumb, and sulphites in many sausage mixes, are the parts people leave off.

The label

Ingredients (teaching narrative)

Pork sausage meat (wheat rusk, preservative: sodium metabisulphite), egg, wheat breadcrumbs, seasoning.

Eggs — the egg in the centre
Wheat — rusk and breadcrumbs
Sulphites — when the sausage mix contains them at or above 10 mg/kg

What this teaches

Two different wheat ingredients both get emphasised. Sulphites come from the sausage mix, not from the egg.

Is this PPDS?

A scotch egg wrapped or boxed before the customer chooses it is PPDS. One cooked to order at a counter is a different service style.

Questions

Is the egg the only allergen?

No. Ordinary sausage meat contains wheat rusk, and the coating is more wheat. Many mixes also contain sulphites.

Can I copy a generic scotch egg label?

Only as a pattern. Your butcher’s mix decides whether soya, mustard or sulphites are on the pack.
