The label
Ingredients (teaching narrative)
Scampi (crustaceans), wheat breadcrumbs, wheat flour, vegetable oil.
- Crustaceans — scampi
- Wheat — crumb and batter
What this teaches
Langoustine and reformed scampi are different specifications. Do not let one label cover both.
Is this PPDS?
Bags or boxes of scampi you pack before the customer chooses them are PPDS. Scampi fried to order and served in a tray are often not.
Questions
Are scampi fish?
No. They are crustaceans. Emphasise that, not fish.
Does the crumb contain gluten?
Ordinary breadcrumbs are wheat. A gluten-free crumb is a different product.
