Pork pie PPDS label example

A pork pie baked and boxed before sale is a PPDS food. The pastry is wheat. The filling’s seasoning — rusk, mustard, stock, jelly — decides the rest of the allergens.

The label

Ingredients (teaching narrative)

Hot-water crust (wheat flour, lard), pork, wheat rusk, gelatine, salt, white pepper, mustard, stock (celery).

Wheat — pastry and rusk
Mustard — in the seasoning
Celery — if the stock contains it

What this teaches

Lard is not an Annex II allergen. The wheat and the seasoning are. Gelatine from pork is not one of the 14; fish gelatine would be fish.

Is this PPDS?

Pies on a counter in bags or boxes before the customer picks one are PPDS. A slice cut and served hot to order is not the same.

Questions

Does the jelly need listing?

Yes, if it is part of the pie. Name gelatine and anything else in the jelly mix.

Is lard an allergen?

No. Lard is not one of the 14. Wheat in the crust is.
