Pain au chocolat adds a chocolate allergen on top of the croissant dough. Soya lecithin is the usual one. Some batons also contain milk. The pastry still brings wheat and butter.

Ingredients (teaching narrative)
Wheat flour, butter (milk), water, yeast, dark chocolate (cocoa mass, sugar, cocoa butter, soya lecithin).
- Wheat — pastry
- Milk — butter
- Soya — lecithin in the chocolate
- Milk again — if the baton is milk chocolate
What this teaches
Dark chocolate is not automatically dairy-free. Check the baton. Emphasise soya when the emulsifier is soya lecithin.
Is this PPDS?
Pastries wrapped or bagged before display are PPDS. Loose pastries on a stand are not.

Is cocoa butter milk?
No. Milk comes from dairy in the dough or in a milk-chocolate baton.
Do I emphasise soya lecithin?
Yes, when the chocolate uses soya lecithin.
