Lasagne portion label example

A lasagne portion lidded before sale is PPDS. Expect wheat, egg and milk as a minimum. Celery in the stock and sulphites in the wine are the allergens in the meat sauce that the cheese layer hides.

Ingredients (teaching narrative)

Durum wheat pasta (wheat, egg), beef, tomato, celery, milk, wheat flour, butter (milk), cheese (milk), red wine (sulphites).

  • Wheat — pasta and roux
  • Eggs — egg pasta
  • Milk — sauce, butter and cheese
  • Celery — stock or soffritto
  • Sulphites — wine, when at or above 10 mg/kg

What this teaches

Egg-free pasta changes one allergen only. The béchamel still has wheat and milk unless you rebuilt it.

Is this PPDS?

Foil trays packed in the kitchen before the customer chooses one are PPDS. A portion plated in a restaurant from a tray is often not.

Questions

Do I declare wine?
List it if it is an ingredient, and declare sulphites when the finished portion meets the 10 mg/kg threshold.
Is a vegetable lasagne free of those allergens?
No. The pasta and white sauce are still there. Check the vegetable stock for celery.
