Croissant PPDS label example

A croissant bagged before the customer chooses it needs wheat and milk on the label, because the dough is wheat and the fat is butter. Egg glaze and almond frangipane are extra, not assumed.

The label

Ingredients (teaching narrative)

Wheat flour, butter (milk), water, yeast, sugar, salt. Egg glaze if used.

  • Wheat — flour
  • Milk — butter
  • Eggs — only if glazed or enriched with egg

What this teaches

An almond croissant is a second product: almonds are a tree nut, and frangipane often adds egg.

Is this PPDS?

Croissants in bags on a café counter are PPDS. A croissant on an open buffet with no bag is loose food and follows different rules.

Questions

Is every croissant milk?
Butter croissants are milk. A fat described as vegetable may still contain milk. Use the bakery specification.
Do I label a plain and an almond croissant the same?
No. Almonds change the allergens.
