A coronation chicken sandwich packed for the fridge needs every component: bread, spread, mayonnaise, chutney and chicken. Egg and mustard come from the mayo. The chutney is the ingredient people forget.

Ingredients (teaching narrative)

Wheat bread, chicken, mayonnaise (egg, mustard), mango chutney (sulphites, mustard), sultanas, curry powder, butter (milk).

Wheat — bread
Eggs and mustard — mayonnaise
Milk — butter
Sulphites — if the chutney contains them

What this teaches

Curry powder is not an allergen by itself. The mayonnaise and the chutney are where the 14 allergens sit.

Is this PPDS?

Sandwiches made in the morning and wrapped for a grab-and-go fridge are PPDS. A sandwich made in front of the customer is not.

Questions

Does coronation chicken contain nuts?

A classic recipe does not. Almonds or coconut are extras. If you add them, they go on the label — almonds are a tree nut; coconut is not.

Is mango chutney an allergen?

Mango is not one of the 14. Mustard and sulphites in the jar often are.
