BLT sandwich label example

A BLT’s allergens sit in the bread, the spread and the mayonnaise. Bacon is often free of the 14 allergens, but some cures and glazes are not. Lettuce and tomato are not allergens.

Ingredients (teaching narrative)

Wheat bread, bacon, lettuce, tomato, mayonnaise (egg, mustard), butter (milk).

Wheat — bread
Eggs and mustard — mayonnaise
Milk — butter

What this teaches

Check the bacon specification before you assume it adds nothing. Some smoked or honey-glazed bacons contain mustard, celery or wheat.

Is this PPDS?

A BLT wrapped before display is PPDS. One toasted to order is not, though allergen information still has to be available.

Pork is not one of the 14. Allergens come from coatings, cures or glazes. Read the pack.

Does tomato need listing?

Yes, as an ingredient. It does not need allergen emphasis.
